If the deck surface (or head) is damaged by scraping head gasket material it can cause leaks and blown gaskets. The surface is machined to a specific "RA" (roughness average) to enable the head gasket to properly seal. Many pros recomend the head(s) and block be resurfaced when ever the head is removed but that would require a total engine teardown.
