Shim size determined by "burls"?

Hi,

I will be replacing my rear spring shims soon, and I need to know what size to order.
This list offers "burls"- are the shims made of wood?
For the rear shims there are three thicknesses listed, but only one "burl" for each thickness?
I would like to know if the shim thickness can be identified by the "burl" count before ordering and removing. My car is a daily driver and pulling the shims to measure before ordering seems like a problem. I don't know if they will still come out in one piece, or has a handful of kibbles.

Please advise, I would like to keep my daily driver a daily driver, not a "jack stand queen".
