Auxillary Fan Temp Sensor Troubleshooting

I recently performed a major service on my car (1990 300SEL). While rejuvenating the cylinder head I also installed all new cooling system parts including radiator, water pump, viscous fan clutch, hoses, recirc pump, mono valve and thermostat. I reused the temp sensor that controls the operation of the auxillary fans.

When the car is running hard at high speed it runs very cool but at slow speed, especially when hill climbing, the temp rises much quicker than it used to and rides around 100C. The car never overheats but I noticed the car has to get pretty hot before the fans kick on. I checked the new viscous fan clutch and it is working fine. I also checked the resistance values on the coolant temp sensor and they are:

~ 320 Ohms @ 100C
~ 480 Ohms @ 87C

I can not find any troubleshooting tables on the 126 CDROM to verify my readings. Does anyone have the specs on this switch?
