This makes me curious, could there be a difference in temp gauges/senders between the 616 and 617? Would I be able to perform this test on a 240 vs a 300?
Gauges would be identical I would expect. The 123 shares in general mostly common parts between all models. A positive verification would be to look up the part numbers for the two separate cars gauges. At the same time cover the sensor part numbers. I am at least ninety percent certain they are the same. Or there has never been any indication otherwise.

I'd test your waterpump. pull it and inspect the fins. should have nice square edges, not thin or sharp.
in this seasonal temps, your radiator is working fine, just your vehicle is not asking for cool water.
I'd lay odds either your thermostat is not opening, or your waterpump is not pumping.
