I've never been out to a gun range and I doubt how safe it is to fire behind me since the 8x57 can go through something like 80cm of pine before stopping! So I haven't even gave my mausers a try yet. I know one is good to go, but the other I think I'll get a new firing pin just to be certain.

Unfortunately I don't know much about electronics, maybe after I get my B.S. in ME I can head back and get some circuitry classes. I also wouldn't mind being able to program logic into chips either, I've done that a little but not enough.
Thing you have to do with the SKS, is not expect too much from it.
Take my Rom for example. I can hit a man sized target at a hundred yards. I can be sure of a kill shot in two shots, which can be acomplished quickly because it's a semi and light and not bad on the shoulder. And that is all it was ever designed to do.
You'll find some that are more accurate than others, but look at the thing, cheap, mass produced, short barrel(it's a carbine after all), and lord knows how many rounds through mine in perticular.
But I tell you true, noise in the middle of the night type situation, I grab the SKS first and foremost. It's just SO reliable and simple.

That all being said and credit being given, while there fun to shoot, trying to shoot for groups will often lead to frustration.
Even the little notch sight is not conductive to good accuracy.
I thought about one of the aftermarket peep sights, but, eh..
