Mrs B, by executive order, has decreed turkey banished from our home.

Instead Chef B will provide will have baked catfish fillets with a creole crawfish sauce on rice with a side of fried okra. Dunno how I'm going to stuff popcorn up it's butt.

Ask a Nutria about the catfish butt thing, but as for okra, folks around here had a very good late crop and I have a ton of it put up. Been, yes I am going to say it, baking it. Toss in olive oil, spread on a sheet pan and liberally apply cornmeal and salt. Convection @425 for 40 mins. Turns out better than breaded and deep fried, but similar. I'm converted (and you know I could give a hang about eating 'healthy'--it tastes better to me).

Since you already have the oven hot at 425 . . . wedge cut come yams like steak fries, drizzle that olive oil over them, lay them on the sheet pan flat, then sprinkle a combination of brown sugar and a bit of cayenne pepper over the oily wedges like salt. Flip them after 20-30 min. and pull 'em around 40 min.

I either do them like that or cut them with a mandolin and make chips (deep fried), and dip them in sour cream with cayenne and sweet paprika on top.

I just brine it in water mixed with 1 box of kosher salt, two bottles of Grandma's molasses, a cup of red wine vinegar for 12 hours. Then it goes on the smoker for 8 hours.

Another thing is to do the brine then cover with a paste of butter, rosemary and sage and roast in the oven.

Jim Beak, Butterball CEO issued this statement: "We apologize to the public for any problems this may cause during the Thanksgiving Holiday. It seems that there was a malfunction in our largest Turkey processing plant and we FORGOT TO BUTTER THEIR BALLS!"
