Try Jalapeno Jack on a cheeseburger.

There are only 3 cheeses 'native' to America; Colby, Jack, and American.

Beef with Bleu (Roquefort) cheese is a classic pairing.

My current favorite is smoked Gouda.

Try making a grilled ham & cheese sandwich with a good ham and Gruyere. (Croque Monseuir)

Brie and mushrooms is another wonderful pairing.

A slice of medium or sharp cheddar on top of a warm slice of apple pie.

Stilton with Port, the greater the age of both, the better.

Stanhope Round. Very hard to get, aged for many years, sold at the cheese factory at Stanhope in Northern Victoria Australia.

the tasteless garbage they call "american cheese" is almost worthless, but better than no cheese at all. swiss sucks by itself, but can be awesome in cooking. colby another almost worthless. but i could eat about a pound of any other cheese every day and not get sick of it. trader joes has a type of brie w/ peppercorns or some kind of spices in it that is unbelievable.
my in-laws are wine experts, and frequently we will have an assortment of cheese with the wine. i now understand the whole wine and cheese thing. and for all these years i thought the perfect complement to cheese was crackers. i'm starting to drool right now thinking about french red wine and imported cheeses. mmmmmmmmmmmmmmmmmmmmm!!!!!

I would venture that only a small minority of Americans have eaten anything other than some form of "yellow" colored, cows milk based cheese. In fact, if it's not yellow, most won't believe it's a cheese worth considering, unless it's melted on a pizza.

That truly is a shame. It's much like American selection of beer . . . truly sad.

Any flavor I can sneak in without being reprimanded by my DW.
Low fat low cholesterol diets don't allow cheese of any sort, unless it's so fat free it tastes like tofu.

If I could have whatever I wanted, Jarlsburg, Gyure (spelling of that one is beyond me), & Brie would be my top 3.

That Land'O'Lakes American makes for a mean Chili con Queso when mixed & heated with just the right combo of onions, peppers, & tomatoes.

Damn, I miss all that stuff:mad:
