The recommended oil is peanut, but you still gotta buy like 3 gallons of the stuff and it's for one use. Everybody should be allergic to canola, stuff's poison.

I got suckered one year and bought one of those contraptions. A bit of ice left in the bird's cavity caused the oil to flash boil over all over the flagstone patio. Fortunately it put out the flame on the burner rather than bursting into flame. Ultimately it came out tasting like a giant fried chicken. Never again.

I love the deep fried version. Peanut oil is the way to go.
