On one episode of The Grand Tour they went into this crash. It seems that the boat hit a big wave, the front came up and the resistance of the air made it flip. Then it sank.

This was all done during the bit where they attempted to break the English speed record for amphibious vehicles.

Which (spoiler alert) Clarkson managed to do.
