W124 rear camber
I had my 300CE aligned at a good shop but when I came to get the car they told me the rear camber is out but about -2.3 degrees each side and is non-adjustable without serious work. Does this sound right?

Is your car lowered in any way? Camber is non adjustable - they're right in that regard.
If you're at stock height your camber should be around 1 degree, but if both sides are even at 2.3 - don't worry about it killing your tires. The tires will just wear normally on the first 3/4 of the contact patch. HOWEVER - with additional camber the toe also changes. As long as your toe angles are in spec - you're golden. I drive a pretty low W124 so I've gone through all of this already.

One side was -2.54, the other was -2.13. Toe is at 3/32". What is the ride height supposed to be at? My car looks lower than other W124s coupes but I doubt the previous owner lowered it. Would the distance from the ground to let's say rocker panel be used to measure or is it measured somewhere else?

Toe spec is .13" to .19"..if you're at 3/32 ( .09" ) you're not within the spec range.

Most likely SPRING "sag". common on 20 year old cars.
Several companies offer camber kits that are somewhat easy to install for those cars IF you don't want to replace all 4 springs.

Spring sag or lower control arm bushings in rear. Camber kit is a real bandaid fix, and most of those kits only remove ~2degrees of camber.

I suppose what it depends on what you define to be a camber kit. I lowered my w124 about an inch and a quarter and went with adjustable camber arms. They brought me into camber spec even just eyeballing it.
However there are folks that like the eccentric bolt/bushing approach, and those I have no experience with. I second the shop to a certain extent, factory, the cambers arms are fixed, however, adjustable camber arms can be installed on one's own. This would not however help fix sagging springs or deteriorating spring pads/bushings, just the camber.
