Spring shims?
I was browsing one of the online parts catalogs and noticed spring shims front and rear and several sizes. Are these used to adjust the height of the car as the springs sag with age? Or for some other purpose?

They are for the factory to get the correct ride height. Many times they use the thickest pads & there isn't any adjustment left. Yes thay can be changed to correct height when springs sag a LITTLE.
