Electric Fans-92 500 SL

When the engine is turned off after heating up, shouldn't the electric fans continue to operate until engine cools down? Also, are the fans controled by the heat sensor in engine via relay and fuse directly or through the AC system switch? Does anyone know: at what temperature/pressure perimeters fans are switched on and off?
