I use reusable chopsticks when at home.
Bamboo ones are probably the best way to go. Cheap, durable and replenishable faster than any tree can grow. My parents have some that are 20+ years old.

Agreed. Bamboo is awesome stuff. Have you seen bamboo flooring? It's attractive and supposed to be harder than oak or maple.

Another "grass" like plant with enormous potential for conserving forests is the much maligned hemp plant. A 1916 US Dept. of Ag report states that 1 acre of hemp will provide as much paper as 4.1 acres of trees, as hemp is an annual crop. Hemp is historically one of the most useful plants to mankind. Geo. H. W. Bush's life was saved by hemp cording on his parachute in WW2.
Hippie loggers in Oregon have undertaken studies with Wash. State Univ. on making press board panels using hemp fibers. The stuff is supposed to be as good as plywood, without the formaldehyde glue fumes, as hemp provides its own glue when heated. I understand some research has been done with hemp beams, sort of like parallam beams.
