Brakes 83 300D W123

HELP. I was doing my snow to regular tire swap and now realize why my brakes feel so bad, there basically aren't any left. I will need to do 4 calipers and 4 rotors. The calipers are my big concern. I am totally unable to make out any marks that indicate Bendix vs ATE in the front and Bendix, ATE, Girling in the rear.
I am planning to replace all 4 with loaded sets of a single brand. Does it matter what I order as long as I maintain the same brand all around? Is there any special master cylinder requirement for the different brands, proportioning valve etc? How do the rear rotors come off? I know to be sure about the e-brake being released. Does it just more or less bang off after the caliper is removed? I'm not interested in trying to rebuild the calipers, I need to do this job very quickly, like one afternoon. I have the rotors and have done fronts on another w123. I've never attempted the rears though.
