My sister graduated with an undergraduate political-science degree (et. al.), and she's now an attorney. But that degree by itself won't do much for you.

Unfortunately, you probably can't complete a double major in engineering and political science in any reasonable time-frame. There is likely little intersection between the programs, once you get past your second year.
