Really though, a good sharp Cheddar, plain and simple.
I do also really like freshly sliced American cheese, even though it's usually considered an abomination by real cheese fans who know their stuff.

The Cheese shop sketch from Monty Python is a favorite, and makes me want to munch on a block of Cheddar.
