I'm not talking about bottled beer. When I was a bartender in Amsterdam, we would run water through the lines every single night. Once a week they would come in from the brewery (Heineken, Grolsch, etc.) to clean the lines, shooting little balls under high pressure though the lines. They would check the temperature of the beer, pressure etc.

And it's not about the selection of beers, it's how it's prepared by the bartender, I haven't seen a single bartender here in the states that can tap a decent beer.

I used to be a bartender in Amsterdam and was able to tap 20 or more beers in one single run (with out opening or closing the tap) and they all would look alike with the right amount of foam. If I would not be able to do this I would be the laughing stock of the bar, European beer drinkers take the preparation of there pilsners very seriously!
