Nice looking car. Oil pressure gauge on this is mechanical, not electric so you should be reading pressure directly.
Temperature seems a little high to me. Check the coolant level. Flush and refill if necessary.
Lots of these 616's have been running wide open day after day in many applications so I wouldn't worry too much about slowing down to save the engine.
