Have fun; but if you really want to play on the tail of the dragon, bring a sport bike not a 25 year old diesel sedan. Your brakes (if they are working correctly) will still not be the limiting factor, all you are going to do is mess up the front/rear balance by changing the calipers.
If you are saying you cannot lock the wheels on you W123 (even with wide tires) you need to repair you braking system, not try to re-engineer it. We have some little mountains here too, the stock brakes are more than adequate for that car.
