Here's a link that shows a few cool dining experiences for kids. My brother took his GF and her daughter to the breakfast in Cinderella's castle and it was the thing the 7 yo remembered as the best thing about her first Disney vacation.
Overall, the site I linked is pretty good for all that kind of info. If you have boys, there are other cool things for them. Check out a dinner package for the Fantasmic show. You get reserved seating for the show after dinner. It's a very cool show and I don't usually like those things. I don't care for the IllumiNations Show at Epcot for example.
It's not for kids, but my wife and I reserved a spot in a Segway Human Transporter class where we got to ride them around the World Showcase before it opened to regular ticket holders.
