I would grab all the switches and relays I could find, maybe pull a window regulator and motor, vacuum line and joints (never hurts to have some spares around), hood emblems, good interior wood, air cleaner bracket, etc, etc.

Basically I would look for all the piddly things that are prone to fail, especially the things that cause you to cuss when you find out how much they cost new.
