Coffee brewing temp should be 190F, which is about a slow simmer. If your brewer has a heated carafe, you're screwed from the start - your coffee will be burned before it's done brewing. Brew into an insulated thermos.

Most home machines won't get you to 190F. If you start with warm water instead of cold, even a Mr. Coffee will get up to 190F. Starting with warm water, I get 205F using this one. I have to use cold water to keep it at a proper 190F.
