I put that same pine up on the ceiling at moms. Framers had the roof ridge line twisted so nothing was square. I had to scab to the rafter undersides and hang a new ridge to square things up for the finish work. Still, on the west side pitch it was 'pull the t&g tight on the north end, leave 'em loose on the south' to make it look right.

I'd take you up on the help too.
Despite my framers being meth addicts, the structure is really true (diagonals on the foundation piers are <1/4" off in a 20' x 36' rectangle) so I haven't had to fight many 'squareness battles.' But, that ceiling of mine is far from perfect...if someone visiting has the balls enough to point out the gaps and irregular joints, I will personally escort them off the property at the pointy end of one of my Tony Lamas.
