Oliver Sachs detailed the experience of at least one blind person whose sight was restored in one of his books. It was not an unqualified success. I recall Sachs description of the man's attempt to 'see' his dog. He had always 'felt' his dog which is a sequential experience. He was unable to comprehend the dog with sight since it required a unified interpretation of his experience in one moment. He found adapting to the world of sight extremely difficult. I think the person ended up regretting his newfound sight.
60 Minutes did a piece on someone who had had his sight restored a few weeks ago. It takes some serious determination to regain sight as an adult.
