Can I go buy one made for a bike tube or something, or do I have to buy an assembly specific for the car?
Sorry, im horrible with terms, let me know if further clarification is needed.

the valve stem is the least of your worries.
I am going to have to do the same thing on my '79 wagon, the place that performed the conversion didn't remove the compressor to flush it properly and R134A never worked right! it would ice up after a short time and stop cooling

It finally quit after 16 months or so. To do the job properly you ought to consider replacing the compressor, or at least removing it to flush out the PAG oil it probably has in it as it certainly will crap up if it sees mineral oil again. A thorough flush is on the list for sure, as well as replacing the expansion valve (need to remove it to flush the system anyway).
