I've owned about 3 older Mercedes with the oil pressure gauge, and this is very common and normal. It really depends on temperature and how much you've been driving too. When my cars started out cold, oil pressure would peg on 3 then slowly go down to 1 then peg 3 when accelerating. No big deal they were all mechanically good cars.
