Stuffed Pork Loin

This thread is for those who like to eat. I'm by no means a chef. I cooked one of these things over the 4th of July in my 5th wheel. I figured I would share it with you guys. Cheap Brinkman box smoker. It was so damn good that I did another one yesterday.

If you want to cook one, just follow the pics. Cook the loin in a smoker, grill or oven until the internal temp. is 145 degrees F and rising. Wrap it in foil for 10 minutes before slicing. I used cotton twine to "tie it up".

The next GTG in FL, I may bring my truck and the smoker if we set up in a park. I had fun at the last one. Great forum, great people!

FYI... For all the Floridians, Publix has been having a sale on some nice loins for about the past 2 weeks. Keep your eyes open! In the pics below, this is only 1/3 of the whole loin from Publix. I cooked 1/3 over the 4th, the other is below (in the pics) and I still have a big chunk in the freezer. Not bad for $18.
