With the big Mercedes like mine, the OIL gauge is always at 3 bar, but often when stopped in traffic or even in very heavy traffic, the gauge is only at 2 bar or 1 1/2 bar, and as soon as you accellerate to a normal speed, it goes back up to 3 bar. So if THAT happens ... nothing is wrong.
The temperature gauge on the 560 normally always hovers around 80 -85 (US car - ) but in heavy traffic, uphill, or with the air conditioning on in heavy traffic, it goes higher, ( 100-105) but when it cools off, no longer long uphill driving, heavy traffic, when it goes back down, so I would not worry.
If your thermostat is stuck you should replace it.
Can you post a picture of the car? We have (most of us) never seen one of them in Jamaica.
