The parking brake is inside the "hat" portion of the rear rotor. That part sticking out in the middle of the rotor is essentially a drum brake. Here's a hint for removing the rotors - don't set the parking brake!

I wouldn't bother to rebuild the calipers; I don't think the uneven wear between the two sides is significant enough to worry about.

I would replace the flexible brake hose if it has not already been done. About a dozen years is the longest I care to let them go.
