I've had mad good luck with the Breadman we have. I've been the bread baker in the house for a year or so, wife got tied of putting the stuff in the machine every other night. I quit using recipes after 6 months... I figured out really quickly that the order in which stuff goes into the pan is important...
This may work OK on a pizza pan in the oven for a rounded type loaf though: the basic machine recipe that I've varied around is like, 1.5c liquid, 1 egg, 1/4 stick butter, 3-4Tbs molasses/honey, optional-handfull of bran (~1/4c), optional-handfull oatmeal, 3c whole wheat bread flour, 2tsp yeast. I've used all sort of stuff for the liquid like water, milk, and even left over coffee (Caffeine Bread!) Different sweeteners like jam or whatever is handy. Add Raisins and cinnamon for raisin bread. Add cocoa powder to make pumpernickel. Basically just mess around with the basic mix and take notes on what worked and what didn't. Mad scientist stuff sometimes.
