I will try a new radiator cap, it is likely the only part of the cooling system that has not been replaced! Thanks!

I don't have a tach in the car, it just sounds to me like it's working really hard. It may be that I am not used to what the car can handle. Everything above the engine block itself is new and professionally installed so I assume it is all as it should be. The car doesn't knock or rattle, it just sounds like it's really wound up. What kind of RPM range can a W114 SOHC handle?
The engine will easily handle 6000 rpm.

You might consider having a pressure check done on the cooling system and take the radiator to a shop to make sure there are no leaks.
