I'd put this in technical for better answers.

I've never had headgaskets go bad from sitting. I've had some water or seals seep a little from drying out.

I use Stabil Fogging oil to shoot into the cylinders to prevent them from rusting while it sits.

When I go to re-start a motor that has been sitting I pull the valve cover and pour oil on the cams and down the timing chain.
