I hate to waste food. There are so many things that can be done with leftovers, that there's no need to throw it out.
Leftover mashed 'taters becomes potato cakes within a few days by adding egg, diced onion, and a dusting of flour. Brown on both sides, and you have a new side dish.
Leftover vegetables becomes veggie soup.
Leftover pork loin becomes hash the next morning by adding diced 'taters and onions.
Left over beef roast becomes beef and noodles.
That brief period of my childhood, where our food supply was so small that we had to depend on the charity of others, taught me a very valuable lesson at a young age...don't ever waste it, you never know when it won't be there.
