I have had most of these cars so here are my thoughts:
W126 is older technology but very easy to work on. I would avoid the kompressor and modified version... you are taking a simple car and making it complex, which means parts and servicing will be expensive. The 560SEL was a great car, so I'm not a fan of messing with it.
W140 is the car I liked the least. YES, it's built like a tank but fuel economy (on my 500SEL) was HORRIBLE and parts were very expensive. Went through tires and brakes and suspension parts like they were free (which they aren't!) Very solid feel (feels like driving a bank vault) so it's more of a highway cruiser than a 'fun' car.
W124 with a 500 engine will be fast as hell.. that is probably the fastest car (in terms of pure power) of the ones you are looking at, other than the modified AMG one of course. This is a monster of a car. If you're young, the insurance might be high on this car.. so check.
R129 - the best of the bunch. You get the power of the other cars, an amazing looking car (best looking of everything you mentioned) and reasonable service costs (these cost the same to service as a W140 even though you think they would cost way more. My R129 was actually LESS expensive to service than my W140).
