For a chain restuarant (which I generally don't like ) Carrabba's is the best I've seen out there.

Best fusion menu I've had in the south is : SideBerns in Tampa.

Best French: Bistro Toujours in Deer Valley

So many other good ones I've been to in San Fran and New Orleans it's tough to decide. But those are some of my favs above.
