I doubt there is anything wrong with your thermostat in the oil cooler. It has a wax pellet inside of it and is controlled by the temp of the oil.

Starts to open at 110C 230F, and fully open at 123C 253F + -.

Get an IFR lazer pointer temp thermometer and check the temp of the oil filter housing after a drive when you feel the oil cooler is not warm enough.
