I think your speedometer/odometer isn't working.

A 300D can barely get much over 30 going 55mph on flat ground with no wind. 75mph will give approx 23-25mpg.

You will not achieve your goal, math and physics will make sure for you.

Even my smaller, lighter, more aerodynamic, more advanced engine, far less powerful 190d 2.2 (73 horsepower) can barely break 36mpg at 75mph on a good day. I even have a lower ratio differential.
