if you have a scale then great if not - then take note of the grease tin or tube contents in weight.
eye ball the level and spoon out the grease on some plastic wrap/bag etc. e.g. if you require a total of 150 grams and the container holds 300 grams you take half of it.
The correct weight is 60 grams for bearing and hub and 15 grams in the cap. by experience this brings the grease about level to both inner races of the hub. It is recommended by MB because as the wheel rolls the oil from the grease will be forced under centrifugal pressure into the bearing rollers keeping it lubed for a long time. Any disc brake grease will work, I personally like the mystik wheel bearing grease and penzzoil 707 - both flow very nicely in the bearing. Mobil 1 is also a very nice grease which bleeds quite easily keeping the rollers lubed.
More important than grease quantity is bearing clearance adjustment. The book says to use a dial gauge (great method) but you can do the old tighten and backoff too - only if you have a feel of wheel bearing adjustment.
