My dad used to break the neck first to give him a better shot at just lopping the head off with a large pair of shears. He'd then slit and gut it, then de-glove the carcass.
This reminds me of a story from my childhood. I used to raise rabbits for show in 4H when I was a child. I came home from school, and began to feed my prize rabbit, Sandy, one that had won 3 blue ribbons for at the county fair...only to find that it wasn't there. I asked my mom if she knew where it went, and she told me to ask my dad, who was behind the barn. There he was, cleaning a carcass that was once Sandy.
I was in tears until dad told me that you never name your food. That reminded me why I raised the animal...it was food.
Sandy tasted great...along side mashed potatoes and fresh green beans.
