I think the idea of killing sharks for their fins is almost as disgusting as this activity.
Humans ar not ecologically sound and never will be. We left balance with nature behind us a long time ago. But we can try to mitigate our ill effects and gratuitous slaughter of sentient beings for some minor nich market should, in my opinion, be combated as much as possible. That goes for wild animal poaching on land in Africa as much as this disgusting activity by the Japanese.

Problem is few people really care to push their representatives to get the thing enforced. Much like me listening to a speech, liking it and electing the person and forgetting about the whole thing.
I'm not sure. If they eat the entire dolphin, that is one thing. From what I hear, they cut off the fins on the sharks and toss them back to die so it is kinda like me shooting a buck, get the horns and leave the carcass to rot. If I don't eat the whole thing, I'd probably make sure someone does so as not to waste it so I'd say shark fins, delicacy or not is worse if you want to go comparing.
You really think so or do you believe that we had conservation in mind in the past? I tend to think it is because we didn't have the technology to kill on a massive scale. IMO, the Nazis were able to kill so many in comparison to the past was that they had the technology. Had our ancestors 1000 years ago possessed the technology, they'd have killed on a massive scale too.
