Raccoons were commonly eaten around here until the WWII generation. It was a ready source of cheap protein and a mild flavor for wild game. About like a wild pig. The downside of eating raccoons is they carry (literally) a shyte-load of parasites and also parasites of the circulatory and muscular systems. Like pork, you gotta cook it until it is thoroughly done.

We will know when economic times are grim when we start hearing about the best ways to cook raccoons.
