I have a friend who is from India. Some years back i found a nice old 900cc honda super sport, maybe mid 80s, that someone had run off the road and messed up. I sourced all the parts and fixed it up over a couple weeks to a month.
My Indian friend who is highly experienced with tiny powerless motorcycles and mopeds wanted to take it for a spin, i said sure thing.
I think he managed to fall off that bike in maybe 200 yards. He cranked the throttle like it was a 2 stroke chain saw motor, not a full on 4cyl bike motor with tons of power.
Starting smaller and carefully is a good idea. He didnt get hurt, but he scared the hell out of himself and completely lost control of the motorcycle in a few seconds. I started out on a honda twinstar 125. Basically a big moped, but great for around town
