I have kept all parts together...example... The rocker arm, valve, valve springs, keepers yadda yadda exactly from which they came in baggies... I keep Zip-Lock in business. I understand that the valves need to be lapped and all that jazz once the head is cleaned and prepped.

Sure, as long as the stem diameters are in service specs, and there is enough margin on the edge of the heads after grinding. Some will say that exhaust valves should not be reused; that is correct for aircraft engines; older road use auto engines in the US did not bring exhaust temps to critical levels, let alone for extended periods, so reuse is quite in order.
