Using a quality ripper, such as LAME/EAC makes a huge difference in the quality of the MP3's.
I've a substantial collection of mp3's on a 20 gig portable player in my car, and it's very obvious which songs were not encoded very well - they all have that mp3 hiss. The stuff I encoded myself and the albums I've downloaded that are encoded well sound quite reasonable with no hiss.
