I like VSTech's solution better but he needs at least 1 server to be in a different location and to have copies on removable encrypted drives so that he can grab them and go. Encryption adds some other complexities. I haven't found anything that different operating systems can all access.

eh, agree on principle but that's overly alarmist. Google anonymizes everything and has pretty strict data policies. The only way you link your phone, youtube, gmail accounts is by consciously opting in to do so. Also, sending a text is not the same as linking accounts. At one point you set your YouTube recovery to your cell phone number, which is inherently different than the phone and OS itself.
