To install the head, work from the middle toward the outside and be very careful not to forget which bolt you were working on and if you do forget, un-tighten the bolts and start over. You want to give yourself the best chances for the head gasket to seal properly. What you are trying to do is insure that the pressure is applied in a motion or direction to completely flatten out the gasket. For instance, if you torque the outside bolts and then torque some toward the middle, the potential for an air pocket would be greater and the chance for a breech in the seal would be greater than if you worked from the middle going from one side to the next then back to the other side until you have worked your way to the outer most edges.
