Spring rates don't change as a spring ages, what is the history of this car?
You want a softer ride but less body roll, these are conflicting requirements that can't be solved with a solved with a spring rate change.
If you want a softer ride, you need less LB per inch of a spring compression.
If you want less body roll, you need more LB per inch of spring compression.

On the shock side of things:
A stiff shock in compression will give for a hard ride. A stiff shock won't limit body roll, it will only slow the rate of roll.
What size . brand , air pressure are you running for tires?

To properly rate a spring, you need a seat contoured to the spring otherwise the reading will be off a bit.
