there is a height adjuster for the headrests. it is hidden on the back of the seat, under the MB Tex. trace down the left pole of the headrest, and i think about 4 or 5 inches down is the button. its hard to push in. if you have your owners manual check in there cause i could be wrong about the exact location, but it is there...

for switching the seat position adjuster i think that would kinda be a PITA. taking the seats apart in general is a PITA. why dont you just go to a salvage yard and find two decent seats? it is totally worth having good seats in the car, when i swapped mine out it made a huge difference in comfort on long trips. and while you have the seats out, clean and spray all the position and height adjust tracks with multilube.
