Welcome!
What matters is how you like them. Nowadays the dynamics are definitely dated but I for one love the mechanical feel they have.
The 3.0 six cylinders are some of the best examples but also relatively common so not as "collectible" if that is a consideration. The Bosch Jetronic mechanical electrical fuel injection system can be a bit challenging if they act up. Very primitive to no diagnostic systems and both electronic and mechanical stuff to check on and adjust. And some of the electronic bits can be a bit pricey. The 24v version EZL module comes up a lot in discussions as an expensive and sometimes hard to find part if it fails, at least during the time I was looking at these cars.
I personally dont like the gray interior as they can turn yellowish at high wear areas like the door pulls over time.
Suspension is fairly straightforward with a few parts that can be expensive if you get new like steering gearboxes and rear SLS struts on the wagon.
Oh, and I noticed some parts are becoming NLA lately but you can still get most of what you need.
But if you like the cars and are mechanically inclined, you should be fine for the most part.
