Splicing one from another model would work but I'd first try testing the existing one and then looking for a good used exact replacement.

With the AC on does disconnecting the probe turn the AC off? Does applying heat and cold change anything electrically? Can you feel the switch open/close when slowly rotating the knob? Testing would rule out other components sticking closed e.g., a compressor relay.
